ABOUT
In this hands-on workshop, you'll be guided by a professional Wagashi artisan to make two types of traditional Japanese sweets, each representing the beauty of autumn in Japan. Each participant will make a total of four sweets (two of each type), enjoy them at the end of the session, and take the remaining pieces home with them.

"Moon Rabbit" & "Sparkling Leaves"

“Moon Rabbit” – Steamed Japanese yam manju (Jōyo Manjū) filled with smooth red bean paste. Inspired by the full moon of the Japanese harvest festival ( Jugoya ), this sweet is a steamed Japanese yam bun. You will decorate the rabbit’s eyes (with edible coloring) and ears (with cinnamon) yourself.
- “Sparkling Leaves” – Nerikiri sweet filled with coarse red bean paste. Symbolizing autumn foliage and persimmon leaves, this sweet is made from pre-colored Nerikiri paste in three shades. You will shape and create the leaf pattern yourself by hand.

WHAT TO BRING
- All ingredients and equipment will be provided by the organizers.
- Please feel free to ask questions during the session – we encourage curiosity and creativity!
- You don't need to bring anything, but we recommend wearing clothes with sleeves that can be easily rolled up.

Place of birth: Tokyo, Japan
Professional career in the art of Wagashi:
2005: Graduated from the Japan Confectionery School in Setagaya, Tokyo
2005 - 2021: Joined Toraya Kurokawa , one of the most prestigious wagashi makers in Japan
• 6 years in the Namagashi production team (seasonal confectionery) at the Tokyo workshop
• 3 years in the special orders division, creating sweets for VIP clients
• 3 years in the product development department, designing new creations for the Toraya collection
2017 - 2021: Assigned to the Toraya Paris boutique
2023: Founds his own Wagashi company and now works independently
Diplomas and certifications:
- “Wagashi Artisan” Excellence Certification (organized by the National Wagashi Association)

- Obtaining the national certificate of confectionery manufacturing technician - level 1 (national qualification).
